How to Store Honey Correctly and Make It Last Forever
Honey is one of the most extraordinary foods in existence — and one of its most remarkable properties is its virtually unlimited shelf life. Archaeologists have found edible honey in Egyptian tombs that is over 3,000 years old. Honey does not spoil. It does not expire. It does not go bad.
But — and this is important — honey only maintains this extraordinary stability when stored correctly. Incorrect storage can cause honey to ferment, absorb moisture, lose its flavour complexity, and degrade its health-supporting compounds. At Tharaka Nectars, we want every customer to get the maximum value from their honey — and that starts with correct storage.
Why Honey Doesn't Spoil
Honey's extraordinary shelf stability is due to several properties that work together to prevent microbial growth:
- Low water content: Pure honey contains less than 20% water — far too little to support microbial growth
- Acidic pH: Honey's pH of 3.2–4.5 is hostile to most bacteria and fungi
- Hydrogen peroxide: Produced continuously by the enzyme glucose oxidase, providing ongoing antimicrobial activity
- Hygroscopic nature: Honey draws moisture from its environment, including from microbial cells, causing them to dehydrate
These properties make honey self-preserving — but only when the water content remains below 20%. If honey absorbs moisture from the environment, its water content rises, creating conditions that allow yeast fermentation.
The Golden Rules of Honey Storage
Rule 1: Keep It Sealed
Always keep honey in a tightly sealed container. Honey is hygroscopic — it absorbs moisture from the air. An unsealed jar of honey will gradually absorb atmospheric moisture, raising its water content and creating conditions for fermentation. Always replace the lid immediately after use.
Rule 2: Store at Room Temperature
The ideal storage temperature for honey is between 20–25°C — typical room temperature in most Kenyan homes. At this temperature, honey remains liquid (or crystallises slowly) and maintains its flavour and nutritional properties.
Do not refrigerate honey. Refrigeration (10–15°C) accelerates crystallisation, making honey difficult to use. While crystallised honey is perfectly fine, many people find it inconvenient. More importantly, the temperature fluctuations that occur when honey is repeatedly moved between the refrigerator and room temperature can cause condensation inside the jar, raising the water content.
Rule 3: Keep Away from Heat
While room temperature is ideal, avoid storing honey near heat sources — stoves, ovens, direct sunlight, or warm appliances. Temperatures above 40°C begin to destroy honey's enzymes and reduce its antioxidant content. Prolonged exposure to high temperatures will significantly degrade honey's health-supporting properties.
Never store honey on a shelf above the stove or in a sunny window.
Rule 4: Use Glass or Food-Grade Plastic Containers
Store honey in glass jars or food-grade plastic containers. Avoid metal containers, which can react with honey's acidic compounds and affect flavour. Tharaka Nectars honey is supplied in glass jars — the ideal storage container.
If transferring honey to a different container, ensure it is completely clean and dry. Any moisture in the container can raise the honey's water content and trigger fermentation.
Rule 5: Use Clean, Dry Utensils
Always use a clean, dry spoon to scoop honey. Never use a wet spoon or dip a used utensil into the honey jar. Moisture and food particles introduced into the honey can trigger fermentation and contamination.
Rule 6: Keep Away from Strong Odours
Honey can absorb odours from its environment. Store honey away from strongly scented foods, cleaning products, or other odour sources. Glass jars with tight-fitting lids provide the best protection against odour absorption.
How Long Does Honey Last?
Properly stored honey has an indefinite shelf life. The “best before” dates on honey jars are regulatory requirements, not indicators of actual spoilage. Honey that has been stored correctly will remain safe and nutritious indefinitely.
However, honey's flavour complexity and enzyme activity do gradually diminish over years of storage, even when stored correctly. For maximum flavour and health benefits, consume honey within 2–3 years of purchase — though it will remain safe and nutritious for much longer.
Signs That Honey Has Fermented
Fermented honey — which occurs when water content rises above 20% and yeast becomes active — has a distinctive sour, alcoholic smell and taste. It may bubble or foam. Fermented honey is not harmful, but it has lost its characteristic flavour and some of its health properties. It can be used in cooking or fermented further into mead (honey wine).
Case Study: Honey Storage in a Kenyan Household
The Mwangi family from Nairobi had been storing their Tharaka Nectars honey in the refrigerator, believing this would preserve it better. They noticed that the honey crystallised quickly and was difficult to use. After learning about correct honey storage, they moved the honey to a sealed glass jar on a cool kitchen shelf.
The honey remained liquid and easy to use. Its flavour seemed more vibrant. And they stopped wasting honey that had crystallised in the refrigerator and been discarded.
"We had no idea we were storing honey incorrectly. Moving it out of the refrigerator and into a sealed jar on the shelf made such a difference — it stays liquid, it tastes better, and we waste less. Such a simple change with such a big impact."

Frequently Asked Questions (FAQs)
1. Does honey expire?
No. Properly stored honey does not expire. The best-before dates on honey jars are regulatory requirements, not indicators of spoilage. Honey stored correctly will remain safe and nutritious indefinitely.
2. Should I refrigerate honey?
No. Refrigeration accelerates crystallisation and can cause condensation that raises water content. Store honey at room temperature (20–25°C) in a sealed container.
3. Can honey go bad?
Pure honey with correct water content (below 20%) does not go bad. However, if honey absorbs moisture and its water content rises above 20%, yeast fermentation can occur. This is prevented by keeping honey sealed and away from moisture.
4. What is the best container for storing honey?
Glass jars with tight-fitting lids are the best containers for honey storage. They do not react with honey's acidic compounds, do not absorb odours, and provide excellent moisture protection.
5. Can I store honey in the freezer?
Yes. Freezing honey preserves it indefinitely without affecting its quality. However, it is unnecessary — properly stored honey at room temperature will last just as long. Frozen honey must be thawed slowly at room temperature before use.
6. Why does my honey smell fermented?
Fermented honey has absorbed moisture, raising its water content above 20% and allowing yeast to become active. This is most commonly caused by storing honey in an unsealed container or using wet utensils. Fermented honey is not harmful but has altered flavour.
7. How do I reliquefy crystallised honey without damaging it?
Place the sealed jar in a bowl of warm water (below 40°C) for 30–60 minutes, stirring occasionally. Do not use boiling water or a microwave, as temperatures above 40°C destroy enzymes and reduce antioxidant content.
8. Can I store honey in plastic containers?
Food-grade plastic containers are acceptable for short-term storage. For long-term storage, glass is preferred as it does not leach chemicals into the honey and provides better odour protection.
9. Does storing honey near other foods affect its flavour?
Honey can absorb odours from strongly scented foods if stored in a porous container or with a loose lid. Store honey in a sealed glass jar away from strongly scented foods.
